Product Information  : Water Mimosa, is a South-East Asian native chewy green vegetable, with a strong mushroom-like umami taste and a hint of cabbage flavour. It comes from a wetland plant, is slightly toothsome, and has a texture akin to kangkong.

It is commonly eaten raw as a vegetable in Thailand but can also be incorporated into Thai cooking such as stir fries or curries like Kaeng Som. It can also be combined with oyster sauce, chillies and garlic to make a deliciously fragrant vegetable dish.
